You’ve paid for the whole citrus, rind and all, so why not make the most of it? All the ingredients are pureed with olive oil in a blender. The result? A fast-acting marinade that needs just 30 minutes on chicken or pork for the most tender and flavorful grilled meat.
Step 1
In blender, puree garlic, lemons, and clementines (rind and all) with oil until smooth. Strain through fine-mesh sieve into jar and discard solids. Refrigerate oil for up to 2 weeks.
Step 2
In large bowl, toss chicken with 1/2 cup citrus-garlic oil and ½ teaspoon each salt and pepper. Refrigerate for 30 minutes. Thread onto skewers and grill on medium, turning occasionally, until slightly charred and cooked through, 8 to 11 minutes.
